One of the common issues when people switch to a more “paleo” way of eating is that it can be expensive. I will be the first to admit, it CAN be very very expensive but it doesn’t have to be - check out this post for some budget paleo grocery tips. I think one of the biggest issues with budget shopping is that it can be boring really quickly. Buying the same things over and over again = making the same things over and over again. I’m more than guilty of making the same recipe until I can’t stand it anymore (literally). So in an effort to change it up, and encourage all of you to do the same, let’s talk about some budget friendly paleo recipes:
Eggs are a great, cheap source of protein and are the perfect breakfast, lunch, AND dinner option.
Soups, chilis, and stews are one of my go-to quick, easy, and budget friendly dinner options.
SLOW COOKED MEALS
You can make even the toughest, cheapest hunk of meat into something awesome just by throwing it in the slow cooker or braising it in the oven for hours. Bonus - these cuts are often cheaper and give you much more food than other cuts.
Poblano & Hard Cider Carnitas *not strict paleo
We eat lots of chicken over here simply because it’s fairly inexpensive, it’s versatile, and provides a good amount of protein. I love dishes with lots of big flavors - I’m definitely not a believer in boring chicken.
