Turkey Spinach Basil Fritatta for One
Except this is not fancy, at all.
But it feels fancy because it has a fancy name that is fun to say - frittata - and it's your own personal frittata.
Plus, you can make this every day of the week and NOT get bored. Change out the type of meat (I highly encourage bacon, duh), veggies, herbs, etc. Basically it's the fanciest, but not really fancy, you-can-make-it-on-a-Monday-morning type of breakfast ever. OH and it's delicious.
