*My thoughts go out to everyone affected by the Boston tragedy. I can't even begin to imagine how those impacted must feel. I hope that the kindness and generosity humanity is capable of comes to the surface to help those in need.* You would think that as someone who writes recipes for a living, has a blog with lots of recipes, and is married to a chef ,that I would have lovely, unique, and elegant meals all the time - but you would be wrong. SO WRONG. Truthfully, I get burnt out on creating new things - after a busy week of writing SO many recipes, I really want nothing more than to not be creative for a few days. Most of meals are very basic - meat, more meat, some veggies, lots of fat, salt, pepper, done. It's not exciting, it's not glamorous, but it gets the job done.
Creating recipes all the time also means that I have a large arsenal of recipes that I could make on any given day but truthfully, some recipes never even get made a second time! I do have some favorites though that get made time and time again because they're just that good. Here are my top 5 go-to paleo recipes:
Breakfast Burgers: Yes, I just posted these but truthfully, we do dinner like this almost once a week. Plus, there's bacon.
Maple Roasted Brussel Sprouts: Tried, true, and guaranteed to make even the most adamant brussel haters swoon.
Paleo Apple Bread Pudding Muffins: I love making a batch of these for easy snacks during the week - you can change out the fruit or leave it out completely, but they're awesome.
Easy Green Curry Chicken Soup: I make some variation of this (swap chicken for shrimp, change out the veggies, etc.) fairly often and it is one of my favorite lunches.'
Cocoa Coffee Chili Rubbed Pulled Pork: This is definitely a house favorite and the rub is also delicious on beef!
