2-Ingredient Sweet Potato Bites


One of the most difficult things about the Whole30 challenge for me has been eating real food after workouts. My stomach is okay with it after pure strength workouts but workouts with any conditioning aspect leave me not wanting to eat. I've been choking down some baked chicken breast and diced sweet potato after workouts and I don't mind it all that much - but I am getting sick of it. So, to combat some food boredom I decided to whip up some portable little "bites" that I could take with me to the gym. DSC_1804_06

These bites contain sweet potato, egg whites, and that's is. Oh, and some cinnamon for a little added flavor and because I'm obsessed with cinnamon. Each small bite contains 20 calories, 4g carbs, and 2g protein. A serving of 6 bites has 130 calories, 20g carbs, and 11g protein. While they won't replace my entire post-workout meal (I need more protein than that), they are a welcome addition to my post-workout routine. They're also great additions to meals or a perfect snack paired with some almond butter (drool). Plus, they're really delicious - they taste just like sweet potato with cinnamon and don't really have an "eggy" sort of taste of them.
