Weekend Highlights & Paleo Pumpkin Pancakes
This weekend was one of the few weekends I have been completely off work in awhile so I tried to make the most of it. It was an equally fun and relaxing few days. Even the pup had a great weekend and enjoyed the beautiful fall weather.
Highlights from this weekend included:
Getting a 205lb deadlift PR! I have been chasing a 200lb deadlift goal for a bit and I'm so excited that I accomplished it! Next up, 1.5x bodyweight deadlift.
Virginia blogger meet up at new restaurant Flames 321. I didn't eat anything (I stuck to wine) but everyone else said their dishes were delicious.
So many pumpkins & fall flowers. Also, pine needles have invaded my yard. Help.
Another highlight? Pumpkin pancakes! My pumpkin baking rampage has officially begun and it is showing no sign of slowing down. I apologize in advance - you better stock up on pumpkin.
These pumpkin pancakes were definitely a highlight of Sunday morning and even my less-than-pumpkin-loving husband was a fan. This recipe makes a small batch so feel free to double it up if you are cooking for 2 or more.
