What happens when you come back from a mini one-day vacation and realize there is laundry, shoot prep, food prep, and cleaning that has to be done? No-bake brownies and toasted coconut happen, obviously.
I need to hide these from myself because I'm sure I could eat the entire batch in one sitting.

No-Bake Brownie Bites with Toasted Coconut
Yields: 12 small bites Adapted from my paleo brownie recipe
1/3 cup almond butter 1/4 cup almond meal 2 Tbsp. cocoa powder 1 tsp. water (more if needed) 1/2 tsp. ground cinnamon 1 Tbsp. maple syrup (or liquid sweetener of choice)
1. Combine all ingredients, except coconut, in a medium sized bowl and mix until incorporated in a thick and sticky batter. 2. Roll batter into tablespoon sized balls. 3. Roll balls in toasted coconut. 4. Keep refrigerated and try to make them last more than 24 hours (good luck).
