This week has been a rough one and we are barely half way through. Work has me pulling some longer than normal hours out of the office which are trying to say the least. I knew that this week was going to be "hell week" (are you jealous yet?) so in addition to my usual Sunday food-prep, I made a little something extra to fuel me through the week. That magical treat was kale salad.
I know, I know. You're thinking "Ugh. Another
crazy healthy living/food blogger talking about how awesome kale is" but seriously, this stuff is good. I'm a huge kale lover but lately, I've felt a little burnt out on my favorite leafy green. Raw kale wasn't doing it for me and sauteed kale on warm spring/summer/whoknowswhatseasonitreallyis days didn't sound appealing - enter massaged kale.
When kale gets a little love in the form of olive oil, tangy orange, and herby tarragon (it's like liquid sunshine) only good things can happen. The kale turns perfectly crisp/tender and the flavors in the dressing meld together to create a bright and refreshing salad. The best part? This gets better as it sits in your fridge.
Now, go give your kale a rubdown. Then top it with these crispy radishes - do it.
Massaged Kale Salad with Orange Tarragon Dressing
Yields: about 4 servings
1 large bunch of lacinato/dino kale, de-stemmed and cut into ribbons 2 Tbsp. good quality olive oil 1/4 cup freshly squeezed orange juice 1 tsp. apple cider vinegar 1/2-1 tsp. orange zest (you may like it a bit less "orangey" so adjust to your taste) 1 tsp. fresh tarragon, finely minced (yes, use fresh. it's magical) salt + pepper to taste
1. Cut kale into thin ribbons and place in a large bowl. 2. In a mason jar or container with lid, combine all remaining ingredients and shake to combine. 3. Pour dressing over kale and gently massage into the leaves and toss. 4. Store in refrigerator.
