Soup is easy, cheap way to make a ton of healthy food for the week and makes a perfect dinner when you don't feel like cooking much of anything. I make soup almost every week so we always have at least one type of soup stocked in the freezer. Those freezer soups have definitely saved me on those days when my fridge is embarrassingly barren and my cooking motivation is dangerously low. Bonus, there are tons of vegan and vegetarian soups out there that are hearty, satisfying, and comforting. Here are a few of my favorite vegan and vegetarian soups:
