Happy 4th of July Weekend!

It's almost the holiday weekend! Woohoo!  That means there is lots of grilling, eating,  and cocktail drinking to be done.  I have always loved the 4th of July - it represents everything that is quintessentially summer and kicks off the month long celebration that is the month of July.  We party hard in July over here since we have three, yes three, birthdays this month.  First up, my future sister-in-law is turning 21!!! And then the next day is Brad's birthday! And then two weeks later, it's my birthday/birthweek!  Yes, I celebrate my birthday for an entire week at minimum. What can I say? That's just how my family does it. To kick-off the month-long celebration that is July, we will be having a little get together with my family for 4th of July.  I'm bringing something extra-special (which I will share later!) but I thought it might be nice to compile a few g-free 4th of July friendly dishes in once place in case you find yourself needing to whip up a dish to share.   Here are some tasty, easy gluten-free friendly dishes that are sure to be a hit at whatever shindig you attend this weekend:

Vegan Blueberry Muffins - for brunch, snacks, or the morning after

No bake Lemon Curd and Strawberry Tart - the best part? no oven required!

Gluten-free Skillet Cornbread - quintessential BBQ side

Vanilla-bean Panna Cotta with Strawberry Mint Puree - try with blueberry puree or coulis for a red white and blue treat!

Raw Tabbouleh - with lots of veggies for a  healthy and refreshing side dish.

S'more Cake ! And cupcakes! To counteract all the healthy things you ate.

Gluten-free Gougeres make an impressive (and insanely easy) appetizer

Bean and Quinoa Burgers can be pre-baked and grilled like regular burgers for a delicious vegetarian gluten-free grill option!

I hope everyone has a fun and safe holiday weekend! Be back next week with something very exciting!
